Chinriu Honten makes umeboshi since 1871 and is well know in Japan for the high quality of its products made of Japanese fruits. Umehachin is a flavored umeboshi (ume plum pickled in salt). Red shiso leaves and bonito fish flakes are pickled together with the ume plum adding the red color and additional flavor. Umehachin is less salty than traditional umeboshi. At first the flavor of shiso is very strong together with the nice acid that is typical for umeboshi. Then the smoky aroma of the katsuoboshi appears and remains on the palate as a long lasting aftertaste.
