Paprika or pimentón is one of the essential ingredients in Spanish cooking. It is used in everything from chorizo sausage to paella to potatoes to sauces. Paprika is also used to add color and flavor to many types of dishes in the cuisines of Turkey, Austria, Hungary, Germany, Italy, Romania, Greece, and Croatia. Its distinct smoky flavor is a result of the oak wood smoke drying process.
La Chinata chooses the best peppers (mainly 'Jaranda', 'Jariza' and 'Bola' varieties) grown by select farmers from the 'La Vera' region. The crop begins in a seedbed in the middle of winter and is later moved to the land to complete the growing. They are hand picked when ripe and are immediately moved from the field to the farmer's smoking house. It's there that the traditional 15 day drying period by oak wood smoke takes place before milling and packaging.
